San Miguel de Allende welcomes Comité, a new restaurant offering a distinctive culinary experience—rooted in Mexican tradition with a global twist. Chef Mike García, one of the creative forces behind the project, describes Comité as a celebration of Mexico’s rich cuisine, reimagined with international influences. The philosophy centers on honoring seasonal ingredients and regional flavors, with a strong emphasis on freshness and locally sourced quality.
The restaurant is located in the central courtyard of a property with a history as rich as its dishes—an intimate space that evokes the feel of a viceregal garden. Originally an 18th-century mansion, the building at Mesones 14 was the birthplace of the legendary Mexican tenor Pedro Vargas. During the Mexican Revolution, it became “La Balanza Mercantil,” a general store and exchange house known locally as the “Bean Bank.” In 2020, the Hoyos family’s fourth generation transformed it into a boutique hotel. Its blend of Mexican neofolk design with contemporary accents now provides the elegant backdrop for Comité, creating a vibrant and refined atmosphere.
Among Comité’s standout dishes, Chef García highlights the unexpected red pork jowl ceviche, where the cooked jowl delivers a surprising texture. For vegetarians, the mushroom “almendrado” has been a resounding favorite. The third top contender is a close call between the pork belly barbacoa, smoked beef tongue, and wood-fired diezmillo.
To complement the menu, Comité features signature cocktails such as the mezcal-based Piña Picosa and the mysterious Jardín de Hoyos.
Comité is the result of a shared vision by Mike García, Vianey Torres, Enrique García, and Omar Medina. What began as a search for a cozy space to open a gastro fonda evolved into an ambitious project—brought to life through the team’s dynamic synergy. Comité Curaduría Gastro is now one of San Miguel’s must-visit destinations, where history and innovation meet in every bite.
